- 3 x zucchinis grated
- 1 x small potato grated
- 1 x carrot, grated
- 1 x onion (diced)
- 11/4 cups self - raising flour
- 2 shots spring onion sliced thinly
- 1/2 cup olive oil
- 100 g bulgarian feta crumbled
- 50 g parmesan, grated
- 1 bunch dill chopped
- 1 bunch mint (chopped)
- 3 x eggs, beaten
- 2 pinches salt
- 1 pinch black pepper
1- Grease a 23-25cm square tin and line with baking paper.
2- Preheat the oven to 180 degrees.
3- In a large bowl mix the zucchini, carrot, potato, onion, spring onion, Bulgarian Feta, Parmesan, mint, dill, oil, eggs, salt and black pepper. Sift the flour and add to the mixture making sure all ingredients are well combined.
4- Pour the mixture into the square tin and bake for 40-45 minutes in the oven.
5- Serve by cutting into equal squares, these can be eaten warm or cold.
Note: You may substitute other cheese for example Ricotta or Australian Feta. I usually use whatever is available at home.
